California Dried Peach Cobbler
You may substitute any our delicious dried fruits in this cobbler recipe.
Preparation
*Reconstitute Dried Peaches
Put California Dried Peaches in a bowl, and pour hot water over the dried fruit to cover. Allow to reconstitute for 2 hours or overnight until plump. Place peaches with remaining liquid in an 8x8 square pan.
When ready, preheat oven to 350º.
Sugar Mixture
In a bowl, combine sugar and cornstarch until well blended and set aside.
Fruit Base
Place peaches in an 8 x 8 square pan.
Sprinkle peaches with the ¾ C sugar mixture (save ¼ C for the topping), water, cinammon, lemon and a pinch of salt
mix well with fork, and spread evenly in pan.
Topping
In a large bowl, combine baking mix, melted butter and milk, until it resembles a batter.
Spoon over peaches.
Sprinkle the remaining ¼ C sugar mixture evenly over the top
Spoon ¼ C hot water over the mixture. (This technique will give the cobbler a glaze).
Bake cobbler for 35-40 minutes, until lightly brown.
