Whisk together all ingredients except the oil.
Slowly add the oil while continually whisking to emulsify the dressing.
In a large bowl, add greens, California Sun Dried Nectarines, onion and pistachio.
Drizzle just enough dressing to lightly coat the salad greens. Don’t over dress!
Toss gently and arrange on plates.
Gently add the burrata to the mixing bowl and coat with dressing.
Place cheese on salad and drizzle with dressing.
