An irresistible fruity-coconut cookie that's moist and chewy on the inside and crisp on the outside.
1. Preheat oven to 350°.
2. Line a baking sheet with parchment paper and set aside.
3. In a medium bowl, whisk egg whites until frothy. Fold in coconut, vanilla extract, salt and fruitons® Summer Dried Fruit Blend. Stir for 1 minute to ensure that all ingredients are coated in the egg white.
4. Use 1 tbsp. scoop, portion out the mixture onto the prepared baking sheet. If needed use your fingers to compact the mixture together.
5. Bake for 18-20 minutes or until the macaroons have turned golden brown.
Cool on wire rack.
