Lettuce Chicken Wraps with Sun Dried Cherry Dressing
This is a healthy and easy to make appetizer ... particularly if you start with a ready-to-eat rotisserie chicken.
Preparation
Sun Dried Cherry Dressing
Whisk together olive oil, wine vinegar, Dijon mustard and sugar.
Add California Sun Dried Cherries,
Marinate for an hour or more.
Filling
Mix together: shredded chicken, herbs, celery and green onions.
Drizzle with olive oil, combine.
Season with salt and pepper to taste
1 head of Boston lettuce, separate large outer leaves and rinse (about 12 leaves from an average head of Boston lettuce)
Assemble: Divide chicken mixture among the large lettuce leaves.
Garnish with radish slices and drizzle with Bing Cherry dressing.
Sprinkle with slivered toasted almonds.
