Mix together the first 4 ingredients. Taste for balance of sweet & tangy. Whisk in the olive oil in a slow, steady stream. Add chives, salt and pepper.

Whisk together the first 3 ingredients. Add garlic, mustard, salt and pepper. Whisk well. Slowly pour the olive oil into the bowl in a steady stream, incorporating and emulsifying the oil. Add shreds of fresh basil to the top of the salad, plus another grind of pepper and salt.
