The bright-tasting Sun Dried Apricot dipping sauce is also delicious when used with sliced chicken, cooked shrimp, and other veggies.

Preparation

Green Beans

1 lb. fresh green beans, tips removed

Steam or blanch green beans until just tender.

Drain and submerge beans in ice water to stop the cooking process and retain bright green color, then chill.

 

Hot & Sweet Sun Dried Apricot Dipping Sauce

Hydrate apricots in warm water for 20 minutes, until just tender.

In a sauce pan, warm apricot preserves until liquified, then add remaining ingredients.

Allow to simmer for 15-20 minutes. Taste for sweet–spicy balance, adjust to your taste.

When cool, pour into a jar and keep refrigerated until ready to use. Lasts 3 weeks refrigerated.
