The Muffin Diaries: Recipes Starring Dried Fruit

Ah, muffins. Like the cupcake of the breakfast table, muffins satiate those with a sweet tooth that just don’t crave a traditional bacon-and-eggs morning meal. With back-to-school time in full swing and busy parents adding back in the school drop off into their morning hustle, muffins are a great grab-and-go, eat-on-the-go breakfast that still provides the humble nutrition of a home cooked breakfast. Blender Blueberry Muffins
Don’t have time for the mixer? Traina Foods new super-quick Blender Blueberry Muffins can be mixed up in a snap using the blender.

Ingredients

  • 1/4 cup Traina Foods Dried Blueberries, plus more for sprinkling
  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/3 cup honey
  • 1 cup milk
  • 1/2 cup applesauce
  • 1 egg

Directions

1. Reconstitute the blueberries by placing them in a bowl and adding just enough warm water to cover them.
2. Preheat oven to 375 degrees F. Line a 12-muffin tin with cupcake papers or reusable silicon muffin cups and spray with baking spray.
3. Add the honey, milk, applesauce and egg to the blender and mix on low until combined.  
4. Add the salt, baking powder and 1 cup of the flour, then mix. When incorporated, add the second cup of flour.
5. Drain blueberries.
6. Remove blender container from basin, add the blueberries, and gently incorporate with a wooden spoon.
7. Pour batter directly from blender container evenly into the prepared muffin cups. Sprinkle with a few more dried blueberries.
8. Bake for 15 minutes or until tops are lightly golden.

Picky-Eater Approved Strawberry Muffins
This new “picky-eater approved” muffin recipe is Traina Foods answer to the tough problems parents face each morning: “How can I get my picky eater to ingest some fruit?” Enter Traina Foods’ new Strawberry Muffins are sweet and delicious, yet packed with the dense nutrition of dried strawberries. Mom win!

Ingredients

  • 1 egg
  • 1 cup milk
  • 2 tbsp. lemon juice, freshly squeezed
  • 1/2 cup strawberry flavored applesauce
  • 1 cup all-purpose flour
  • 1 cup white-wheat flour
  • 1/3 cup granulated sugar
  • 1 tbsp. baking power
  • 1/4 tsp. salt
  • 1 tsp. vanilla extract
  • 1 cup Traina Foods Dried Strawberries, chopped

Directions

1. Preheat oven to 400 degrees F. Line a 12-muffin tin with cupcake papers or reusable silicon muffin cups and spray with baking spray.
2. In a large mixing bowl, combine egg, milk, lemon juice and applesauce. Then add the flours, sugar, baking powder, salt and vanilla. Once incorporated, allow mixture to sit for 15 minutes, during which time it will rise.
3. Gently fold in the dried strawberries.
4. Pour batter evenly among the 12 muffin cups.
5. Bake for 18 to 20 minutes or until tops are golden.
